不同品种魔芋精粉中氨基酸含量分析研究

摘要:
花魔芋和白魔芋精粉中均含有18种水解氨基酸和18种游离氨基酸,前者水解氨基酸的总量为2.44%,其中必须氨基酸质量分数为0.62%,游离氨基酸总量为1.10%,其中游离必须氨基酸质量分数为0.33%;后者水解氨基酸总量为2.01%,其中必须水解氨基酸质量分数为0.56%,游离氨基酸总量为0.41%,其中必须游离氨基酸质量分数为0.13%.提示白魔芋和花魔芋精粉中氨基酸含量略有差异,但此差异不大,其品质,营养价值及特性等主要取决于魔芋精粉中主要成分葡甘聚糖的含量.

Abstract:
It was found that there were 18 hydrolytic and free amino acids in the refined powder of Amorphophallus konjac and A. albus. Total Contents of 18 hydrolytic amino acids, hydrolytic essential amino acids, 18 free amino acids and free essential amino acids were 2.44%,0.62%,1.10% and 0.33% respectively in the former and 2.01%, 0.56%, 0.41% and 0.13% in the later. Their nutritional guality and other special properties were mainly depended on the content of KGM in the refined powder of Amorphoallus konjac and A. albus .
